Ingredients:
3 cups TAIFA All Purpose flour
1¼ cups (or less) water/ milk
1 tbsp yeast
1 tbsp margarine
½tsp baking powder
¼tsp ground cardamom powder
¼tsp #Sunsalt

Preparation:
- Mix well all ingredients in a bowl except water.
- Gradually add in water as you knead; to make a soft but firm dough ( not sticky).
- Make 2 or 3 balls, roll them out slightly, and cut out thick (about ¼inch) squares /diamonds.
- Cover the squares and set them aside for about 20mins to rise.
- Heat up Halisi Fry oil in a deep frying pan and deep fry the Mitai in medium- low heat to allow them to cook well inside.
- Once they achieve a golden tan on both sides, take them out of the oil to cool.
Sugar-Coating procedure:
- Boil 1½ cup of sugar in 1 cup of water until the syrup achieves a two-thread consistency when stretched between two fingers.
- Add the Mitai to the syrup and turn the heat down to low.
- Hold the sufuria on both sides and start tossing the Mitai so that the syrup coats them properly and evenly.
- Toss until the sugar coat crystallizes
